There’s something to be said for a great dish that anyone (especially a college student on a budget) can throw together at the drop of a hat and a frittata is just that! Whenever you get those cooking blues and you don’t know what to make… look in your fridge… take out some eggs… and whip up a dish thats like heaven in your mouth. A frittata is a baked egg dish that can be spiced up with meats or starches but it’s also a great way to incorporate some veggies into your diet. Bonus… it means I can eat more breakfast food for dinner! I usually throw in whatever cheese is in my fridge (usually cheddar but occasionally parmesan) with some tomatoes, spinach, or leeks.
Here’s a great recipe from sweat peas kitchen that features a more traditional italian frittata…but I’m not kidding when I tell you it can clean out your fridge. Any veggies or cheeses that you have… toss it in a couple eggs and beat it all together…voila! baked into perfection!
